Garlic Wild Rice & Salmon
As we get further along into the year it seems like there is so much more to keep track of. Keeping this in mind, I have started to focus on quick, easy, and healthy meals that don't forget about the taste. Here is my recipe for salmon over garlic wild rice, enjoy!
Rice Ingredients
3/4 cup long grain wild rice
1 tsp roasted garlic powder
1/2 tsp salt
1/4 tsp onion powder
1 tbs butter
1/4 tsp parsley
Fish Ingredients
2 pavé cuts of Salmon
1/2 tbs olive oil
1/2 tbs crushed black pepper
3 cups Normandy Blend vegetables
Meal Preparation
Finely chop parsley and mix in garlic powder, onion powder, and salt. In a medium sauce pan, combine rice, seasoning, and 1 tsp of butter over medium heat - cover and bring to a boil. [No time to wait for your rice to boil? Pick up a bag of Uncle Ben's quick rice]
While the rice is cooking (18-22 minutes), coat fillets of salmon in olive oil and black pepper evenly. Place salmon in saute pan on low-medium heat & turn every 3 minutes to cook evenly. Cook salmon through fully (approx. 11 minutes).
In a small sauce pan, add 2 tbs of water and vegetables on medium heat. Cover vegetables and let steam. Meanwhile, your rice should be nearly done. Remove lid from rice and stir to keep rice from sticking to the bottom. Reducing heat, let rice continue to cook until all water is gone. Stir vegetables to steam evenly and avoid any sogginess.
Since half the work with cooking is presentation, grab a nice plate and style your dinner! Remove all pots and pans from heat. Serve as is or salt to taste. Keeping with the healthy trend, I served this meal with passion fruit LaCroix. Feel free to pair this fish focused dish with lemonade or a white wine.
