Kolaczki Cookie Recipe

Over the past few months I've gotten into making Kolaczkies pretty regularly for my family. These sweet and simple to make cookies are a great treat to have around the house or perfect dessert for a party! These jam filled cookies are named after Kołaczki, a town in Poland, and normally made around Christmas time. I personally believe that anything this delicious should be made and shared year round…or when the mood strikes! So without further delay let’s get into the. recipe.

When baking for this post, I decided to make a gluten free version of these cookies so that everyone in my family would be able to eat them. That said, this same recipe holds true for gluten free flour! Simply substitute in your flour of for the same quantity. I have found that while the gluten version is easier to fold, the gluten free 1-to-1 provides more of a biscuit like texture (but not too hard) and nice flavor. Try both and find what is right for you!

Tip: If you are using gluten free flour and struggling to get the folds done well, swap out a little bit of Casava flour (1/4 cup) to help with dough flexibility!

TOTAL TIME: 60 MINUTES

PREP TIME: 30 MINUTES + COOK & SET TIME: 30 MINUTES

Ingredients

  • 8 ounces cream cheese (room temperature)

  • 1/2 cup butter (room temperature)

  • 1 & 1/2 cups all-purpose flour

  • 1 jar (~16 ounces) of your favorite filling (e.g., raspberry, strawberry, marmalade)

  • Garnish: confectioners' sugar for dusting


Preparation

  1. In a large bowl, cream together butter and cream cheese until light and fluffy

  2. Add in one cup of flour at a time, make sure to mix well so that flour, butter and cream cheese are well integrated

  3. Roll dough into large ball and refrigerate for 15-20 minutes

  4. Heat oven to 350° F

  5. Take dough out and roll into a rectangle with a height of 1/4 inch

  6. Cut dough into 2x2 inch squares

  7. Transfer squares to baking pan and place 1/2-1 tablespoon of jam in the middle of each square

  8. Fold two opposite corners of the square together to form a parallelogram / diamond shaped cookie

  9. Bake for 10-12 minutes until golden brown

  10. Let cookies cool for 15-20 minutes

  11. Dust lightly with confectioners’ sugar & enjoy!
