Rustic Vanilla Cake
Recently I have become slightly less of sweet tooth. Shocking, right?! But like anyone I enjoy indulging in a slice of cake for time to time... And what better time to treat yourself to something sweet than the holidays?! SO I took it upon myself to make a simple and rustic vanilla cake with vanilla icing. Check out the recipe:
Cake Ingredients
- 1½ cups all-purpose flour
- 1 cup white sugar
- ½ cup room-temperature salted butter
- 2 eggs
- 2 teaspoons vanilla extract
- 1 ½ teaspoons baking powder
- ½ cup milk
Instructions
Preheat oven to 350 degrees F (175 degrees C). Grease four 5 inch cake pans.
In a large bowl, cream together the sugar and butter. Beat in the eggs, one at a time and then stir in the vanilla. Combine flour and baking powder, adding them to the creamed mixture. Mix well.
Stir in the milk until batter is smooth. Pour or spoon batter into the prepared pans and bake for 10-12 minutes (or until knife comes out clean).
Icing Ingredients
- 4 tbs unsalted butter
- 2 cups confectioners' sugar
- 2 tbs low fat milk
- ½ teaspoons vanilla extract
Instructions
In a small bowl, beat butter, sugar, milk, and vanilla together until light and fluffy. Add more sugar for a thicker icing (optional).
After the cake has been baked, let it sit and cool 15+ min. Once it is cool enough, make sure each layer of cake is flat. If slanted, slice off excess cake and create a flat top. Coat icing between each layer of the cake as you stack them. And rather than ice the last layer of the cake, dust confectioners' sugar over the top for a "snowy" effect.
